2021 Parola's Cabernet Sauvignon
Hallelujah! Limited by name, limited by nature. The last release of this wine was way back in 2013 and the release prior to that, 2006! A long time between drinks for sure but while these wines are elusive, they certainly are worth the wait.
When the fruit reaches the level of generosity and concentration required for this label, only the best oak will suffice. In a former life, Smithy worked alongside industry legend John Glaetzer. John’s secret to memorable Cabernet - get the oak right! French oak cuts the wine - American oak builds. A combination of the two works wonders for keeping the palate supple, while bringing sweet caramel and vanillins along with complexing spice to the wine.
Lashings of blackcurrant cassis and mulberries flood the palate while subtle bay leaf and graphite add depth and intrigue. Structural tannins create lasting mouthfeel and make for the hallmarks of a wine that will go the distance in the cellar.
